Heat olive oil in a large pot over medium-low heat. Once hot, add the onion and garlic. Season with salt, pepper, thyme, and herbes de provence, about a pinch each. Peel carrots and chop into rounds and add to pot. Add diced tomatoes, corn, green beans, celery, potatoes, and vegetable broth and continue to cook, stirring occasionally. Finally, chop kale and stir into soup. Bring to a simmer, and cook until vegetables are tender. Enjoy!
